We all have recipes from our family archives that we’ve collected over the years, and maybe some we have swapped from friends, magazines, cookbooks, & neighbors!

I got this recipe from a friend I went to school with. I don’t know what it’s called, but it’s very tasty in the summertime and something fast to put together when you’re invited out on a picnic or summer party, and you would like to bring something. So, let’s call it ummmm… “CUCUMBERS ON ICE”!
Peel large cucumber and slice
Peel medium onion and slice
Mix 1 cup vinegar in a jar
1 1/8 to 1/4 cup sugar (you can also use artificial sweetner mix to taste)
Mix everything together in a bowl and let set overnight.
Put it in a big jar if you like and serve chilled.
