Hi Everyone! This is my Weight Be Gone Thursday for me. If you’d like to follow me in my journey you are welcome. The reason I’ve started my journey is I had a rude awakening to the reality of life in that I’m not getting any younger, and if I still wanted to lead a fun, and happy life I had to make some serious changes.
Well folks going to have to skip this week cuz we bees on V-A-C-A-T-I-O-N! I will say one thing getting in some walking too, which is a good thing, and of course swimming. Tomorrow Great America again, and when I get back I’m going to the Key Lime Cove Paradise Mist Spa , which was given to me by the General Manager, Dale McFarland of the Key Lime Cove Indoor Water Park Resort in return for a review, which will be posted as soon as I get back. So tomorrow I’m going there, and I’ll let you know all about it. Woo Hoo. I’m going to say probably over the weekend. So come back, and check it out. THANKS! Also: A quick recipe I enjoy for the summer:
For Waldorf Style Chicken Salad you will need:
- 1 Large Skinless Boneless Chicken Breast
- 1 cup Juicy & Firm Apples
- 1 cup Green Seedless Grapes
- 1/2 cup Celery
- 1/4 cup Walnuts
- 1/4 cup Light Mayo
- 1/4 cup Plain Balkan Style Yogurt
- 1 tsp Lemon Juice
- Substitute salt & Pepper to taste if needed
Grilled the chicken breast till done, but it’s nice and juicy. Let it cool down and then chopped into smaller cubes & then wash and dry all your fruit and vegetables.
In a bowl combine chopped apples, chopped celery, cut up grapes (in halves), chopped walnuts, mayo, yogurt and lemon juice. Mix it well. Add the chicken and toss it gently around till everything is lightly cover with the mayo and yogurt mixture.
