 Being as I’ve been working on my vegetable garden getting it ready for planting I’ll be planting some zucchinis, and I found a recipe I had saved I’d love to share with you.  YUM

 I made zucchini bread muffins for the first time a few years ago & they came out great.  I used a recipe from allrecipes.com for inspiration, but switched it up a bit.  You know me MOODY SURPRISE QUEEN!  ~snicker-snicker~

Ingredients:

  • 3 cups flour
  • 1 tspn salt
  • 1 tspn baking powder
  • 1 tspn baking soda
  • 3 tspn cinnamon
  • 1 3/4 cup white sugar
  • 1/2 cup brown sugar
  • 1 cup chopped pecans
  • 3 tspn vanilla extract
  • 3 eggs
  • 1 cup oil
  • 2 cups grated zucchini

Directions:

  1. Combine flour, baking soda, salt, cinnamon, and baking powder in a bowl.
  2. In separate bowl, beat together eggs, oil, vanilla, and sugar.
  3. Slowly add dry ingredients to the second bowl until they are well mixed together.
  4. Add pecans and zucchini.
  5. Add batter to muffin tins (with cupcake liners).
  6. Bake about 20min at 325deg (until top is firm and lightly brown).
The tops are slightly crunchy and the muffin is sweet, but not overly so.  They make a great breakfast on the go!

img409Sept. 1980 Believe it or not this little girl is coming in next month to take her State Board exams to be an RN Yep, my little girl, Missy.  She’ll be 34 in June.  This is also the one that weighed 3 lbs. 2 oz.  my little miracle baby.  I fattened her up good when she got home didn’t I?  ~hehehehe~

    My MIL would make delicious zucchini bread. She would let her zucchinis grow to enormous size in her garden than make loads of zucchini bread to give out. She was quite a miracle woman.

    Tell Missy that I wish her good luck in taking her exams. I first volunteered at a hospital then later on got hired on as a dishwasher for my first job. At that point I knew I never wanted to be a nurse with all the guff they take from doctors, and all the paperwork they had to fill out.

    Sounds like you’re all ready to do some plantin’ and some eatin’! Good luck with your garden-those zucchini bread muffins sound quite delicious.
