How many times have you wondered what to do with all the zucchini you have on hand? Well, here’s a chocolate-y answer to that question! Yes, chocolate. Don’t laugh until you’ve got some of this heavenly Chocolate Zucchini Bread in your mouth.

Chocolate-Zucchini-Bread-OR(found at Mr. Food Test Kitchen)

What You’ll Need:

3 cups all-purpose flour

2 cups sugar

1 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon salt

1/4 teaspoon baking powder

1/4 cup baking cocoa

3 eggs, beaten

2 cups grated (about 1 large) zucchini

1 cup vegetable oil

1 cup chopped pecans

1 teaspoon vanilla extract

What To Do:

Preheat oven to 325 degrees F.

In a large bowl, mix together flour, sugar, baking soda, cinnamon, salt, baking powder, and cocoa. In another bowl, combine remaining ingredients. Stir zucchini mixture into flour mixture.

Grease well and lightly flour two 9- x 5-inch loaf pans; divide mixture evenly between loaf pans.

Bake 55 to 60 minutes, or until wooden toothpick inserted in center comes out clean.

Cool 10 minutes on a rack then remove from pan. Cool completely before slicing.

6.24.2000 – This was six months after we eloped, but we got married in the backyard of our home again by a priest so Dave’s Mom could see her only son get married. I didn’t want to take that from her. We got married promptly at 4:00 p.m. when it started to POUR! All day it was sunny until then. ūüôĀ Oh well, it was still fun. This year we’ll be married 15 yrs. We were going to have a party, but unless I make some money somewhere the party has been cancelled. ūüôĀ

    I love how you can sneak good-for-you foods into stuff that looks and tastes not-so-good for you! Makes me feel all sneaky and whatnot ^.^ I certainly hope you will be able to have that party of yours! It might not be now but you’ll be able to do it eventually.

    I won’t turn down anything chocolate, but I’ll be the first to admit that you may have to sneak this one in on me until after I’ve had my first nibble to see what my reaction is before you spring the news that the cake I’m eating is a vegetable in disguise. lol All teasing aside, though. I’m open minded when it comes to trying new things just as long as its not too weird or gross. ūüėÄ

    I love zucchini and have made bread many many times, its the best.

      I gave my friend a great big zucchini from my garden, and she brought over five little tiny zucchini breads with raisins and walnuts in there. They were so very good! mmmm

    Since I am not a fan of zucchini, this is the best way to eat it by hiding the flavor! My mom used to fry up some zucchini in a pan and mix it with scrambled eggs. I hated it as a kid. It got worse when she decided to add some ground beef.
