This is from a dinner kit from Old El Paso called Soft Tacobake.  Personally it looks like Mexican Lasagna to me.  You do it the same way you would do taco meat frying the hamburger, draining and then putting your season mix, but I did a little Moody twist.  I also added chopped garlic cloves, a sliced/chopped tomato, a chopped purple onion, and one chopped cucumber.  Yes, this is all with the meat.  Plus added my own spices to the meat (garlic & onion powder, celery salt, pepper).

After which I preheated the oven to 350 degrees, and then I took one of the soft tortilla and put it in an ungreased 9″ glass pie dish and then I put a 1/2 cup of my meat mixture and there’s a cheese pouch in with the dinner kit and put some of that on top of the meat and repeated until I had four layers.  On the very top I put a couple of slices of cheese, and this is what I got besides 2 very full bellies with just 1/4 of this pie pan.  WOW!   It was really tasty.

Honeymoon 1943

Being as it’s almost Sept 1st & that would’ve been my parents wedding anniversary of 71 yrs. Here’s their honeymoon picture. Two love birds! Aren’t they cute?

    To really make your Mexican food a little more authentic, you need to add some extra cilantro. Fresh would be best, but dried is fine, too. It was so weird not to find fresh cilantro in New Jersey, but then, back there, they are loaded with so many different Italian foods that we don’t have here in California. I remember how amazed I was by the variety of ricotta cheese! There was a whole section of it consisting of four shelves! We are lucky to have two different brands in two different sizes.

    Still not feeling my best. The cold has left me to where I cough all night long, and I wake up just exhausted. I don’t cough too much during the day, but when I lay down to nap – cough cough cough.


    Surprise, surprise, Marie – I actually have a NEW recipe to share with you this weekend! You are going to love it – it is truly delicious! 🙂

    My husband loves Mexican food, so your recipe looks like something he would love!
