It seems I just cannot get it together lately. Sorry I’m so late – hope you’ll forgive me!

For Waldorf Style Chicken Salad you will need:

  • 1 Large Skinless Boneless Chicken Breast (store bought Rotisserie will work fine)
  • 1 cup Juicy & Firm Apples (I like Spartans or Ambrosia)
  • 1 cup Green Seedless Grapes
  • 1/2 cup Celery (optional)
  • 1/4 cup Walnuts (chopped)
  • 1/4 cup Light Mayo
  • 1/4 cup Plain Balkan Style Yogurt
  • 1 tsp Lemon Juice
  • Salt & Pepper to taste if needed

Grilled the chicken breast till done, but it’s nice and juicy. Let it cool down and then chopped into smaller cubes.

Wash and dry all your fruit and vegetables.

In a bowl combine chopped apples (skin is optional), chopped celery, cut up grapes (in halves), chopped walnuts, mayo, yogurt and lemon juice. Mix it well. Add the chicken and toss it gently around till everything is lightly cover with the mayo and yogurt mixture.

    Where do you find Balkan style yogurt. I know that Greek yogurt is everywhere now, but what is Balkan style? A Waldorf salad is a must have for my grandmother at Thanksgiving and at Christmas.
