Gingerdoodle Cookies

Thanks to Betty Crocker~

Gingersnap Cookie Dough

1  cup packed brown sugar,  3/4 cup shortening,  1/4 cup molasses

1 egg.   2  1/4 cups Gold Medal™ all-purpose flour
2 teaspoons baking soda,  1 teaspoon ground cinnamon
1 teaspoon ground ginger.  1/2 teaspoon ground cloves.  1/4 teaspoon salt

Snickerdoodle Cookie Dough

3/4 cup granulated sugar,  1/2 cup butter, softened
1 egg –  3/4 cup plus 1 tablespoon Gold Medal™ all-purpose flour
1/2 cup Gold Medal™ whole wheat flour  –  1 teaspoon cream of tartar
1/2 teaspoon baking soda –  1/2 teaspoon salt

Cinnamon-Sugar

1/4 cup granulated sugar  –  2 teaspoons ground cinnamon

Directions

 1. Heat oven to 375ºF. Line cookie sheet with cooking parchment paper.   

2. In large bowl, mix brown sugar, shortening, molasses and egg. Stir in remaining Gingersnap Cookie Dough ingredients. 

3. In another large bowl, beat 3/4 cup sugar, the butter and eggs with electric mixer on medium speed until well mixed. Stir in remaining Snickerdoodle Cookie Dough ingredients. 

4. For each cookie, shape a level tablespoon of Gingersnap Cookie Dough and a rounded teaspoon of Snickerdoodle Cookie Dough into a ball. In small bowl, mix 1/4 cup sugar and 2 teaspoons cinnamon. Roll dough balls in cinnamon sugar; place on cookie sheet. 

5. Bake 9 to 11 minutes or until light golden brown around edges. Cool 2 minutes on cookie sheet. Remove to cooling rack to cool completely.  

6.  Call me as soon as they’re out of the oven!  🙂

Above is my Aunt Mitzi back in the day, simply gorgeous! This is my lovely Aunt Mitzi, Godmother, and second mother to me with her dog Cody and she is 91 yrs. old TODAY, Thanksgiving Day. God Bless her, and still beautiful! HAPPY BIRTHDAY Aunt Mitz!  Love You immensely!  I’m SO THANKFUL          for YOU!

I have a recipe from my friend’s wife, and I asked if I could share it because it’s sooooooooooooo good and they said yes!  Woo Hoo!  Check this yummy stuff out!  It’s sooooooo good!

“Turkey Pecan Florentine

          with Bowties”

This is one of her family’s favorite dishes.   She makes this dish whenever they have any leftover turkey or when she roasts a turkey breast & there’s leftovers.  The pecans give this dish a wonderful taste and a nice nutty flavor!  mmm

Prep Time: 35 Minutes
Serving Size: 3 People

Ingredients:

  • 1 Pound of Bowtie Pasta
  • 2 Pounds of Fresh Spinach
  • 4 Tablespoons of Butter
  • 6 Ounces of Fisher Chopped Pecans
  • 3 Tablespoons of Flour
  • 1-1/2 Cups of Milk
  • 1/4 Cups of Grated Parmesan Cheese
  • 1/4 Cups of Grated Pecorino Romano Cheese
  • 1/2 Cups of Heavy Cream
  • 4 Cups of Cooked Roasted Turkey
  • 1/2 Teaspoons of Salt
  • 1/4 Teaspoons of Pepper

Directions:

  1. In a 8 quart pot, boil water and cook pasta. Cook approximately 8 minutes, drain, set aside.
  2. Preheat oven to 350°F. Cook spinach in boiling water. When done, drain well and layer it in the bottom of a 1-1/2 quart casserole dish.
  3. In a medium saucepan, melt 2 tablespoons butter, stir in chopped pecans, flour, salt and pepper and gradually add milk. Cook, stirring constantly, until mixture comes to a boil and thickens. Reduce and add cheeses and cream, stirring over low heat until cheese melts.
  4. Mix in pasta and cooked turkey and pour over spinach. Bake for 15 minutes.
  5. Remove, stir well, sprinkle with your choice of cheese and enjoy!
